Orange Chicken with Thyme

This is a rework of the citrus chicken with roasted red onions I posted some time ago. I was quite happy with the citrus chicken, but well anything is open to a slight modification, so here it is ... Orange Chicken with Thyme!



6 boneless chicken breasts, skin on
Handfull of thyme
2 oranges
4 tbsp fine cut marmalade
1 tsp cinnamon
1 tbsp flavourless vegetable oil
2 onions, sliced into eight wedges

This served 4 adults and 1 child

Turn the oven to fan 180 degrees / conventional 200 degrees / gas number 6
Cut one orange into half and squeeze the juice into a bowl, mix in the marmalade, cinnamon and oil, season carefully
Make three slashes in each chicken breast, putting a sprig of thyme into each slash
Put the chicken and onions into a large baking dish
Cut the remaining orange into eight wedges and arrange around the chicken with the onion wedges
Spoon the marmalade mix over the top
Bake for 30 minutes or untill the chicken is golden and cooked through

I love the flavor of orange with chicken. My wife makes a few variations thereof, including a Chinese 5-spice with orange chicken. Your version looks and sounds fantastic!
