A Plate of Antipasto for Two

I'm a big fan of throw together gluten free food, sourced from foods where I'm not doing a gluten free conversion. The meals that suit me best are those that are produced from ingredients that are naturally gluten free. Saying that, I have a desire for some gluten free pizza, so I'll be hopping over to Mike's Gluten Free Blog to get his recipe for a gluten free crust. That's another day though, and today it needed to be a quick meal and a glass of wine, this is what I produced ... Mediterranean Antipasto for Two!



6 - 8 slices Prosciutto ham
1 mozzarella cheese, drained and ripped into slices
3 fresh figs, halved
1/2 280 g jar Italian prepared artichoke antipasto
10 - 12 fresh basil leaves
3 onions pickled in balsamic vinegar
10 - 12 black olives, pickled
Drizzle of good olive oil

Try and be as artistic as possible when preparing this dish, which is just a matter of layering up the plate with different colours and different tastes
Loosely wrap the figs in the prosciutto ham and place on the plate first, add the artichokes next, followed by the pickled onions and olives
Scatter the torn mozzarella, drizzle over some olive oil and add a few fresh basil leaves

First, I thought you had put cherries in your salad (which would have been an interestig addition). It looks extremely yummy, I love simple food in the summer...
