Raspberry Eton Mess

Eton Mess is a classic English dessert, named after Eton College, an English public school, where it is served on June 4th every year. Eton College is a boys school attended by the Princes William and Harry as well as other members of the British royal family and others from the British aristocracy

Traditionally it is made from a combination of cream, strawberries and meringues only. Yup! Gluten Free! I have adapted it somewhat, essentially to lighten the calorie load by increasing the amount of fruit used and using a mix of low fat Greek yogurt and cream instead of all high fat double cream



200 g raspberries
200 g low fat Greek yogurt
200 g double (heavy) cream
2 meringue nests crumbled

To serve 2

Put raspberries bowl and lightly crush them with a fork
Whip the cream until it has thickened considerably and is of 'dropping' consistency
Add Greek yogurt to the cream.
Carefully fold in most of the raspberries, leaving a few behind, for decoration, and the crumbled meringues
Spoon into 2 glasses, top with the remaining berries

Serve immediately

If this isnt served fairly quickly, the meringues will melt into the cream, so add them at the last minute
