Rum and Raisin Ice-Cream

This is a guest post from my husband! Well after a fashion! He found a recipe, adapted it slightly and produced this ice cream, using an ice-cream maker. Ice-cream makers seem to be a bit of a trend in my family at the moment. My son, 21, has seen some of the ice cream that I've produced, and has has now managed to talk his partner into buying him one. So last night while all his mates were having a good time out and about somewhere, he was at home making mint-choc ice-cream. However this post is all about my husbands ice-cream, so here goes with the sort-of-guest-post



4 tbsp dark rum
1 cup raisins
4 tbsp sugar
4 eggs
1/2 pint double (heavy) cream
1 tbsp lemon juice

Put the raisins in a bowl with the rum, allowing the raisins to soak in the rum for about an hour
Put the egg yolks and sugar in another bowl, whisking until thickened
Whip the cream, sugar and lemon juice together until it thickens, add the egg and sugar mix, add the rum and raisins
Beat the egg whites until they are stiff, then fold into the mixture
Process in ice-cream maker, following manufacturers instructions

Too bad I don't have an ice-cream maker or else I would love to try it out. Looks super delicious.

That looks delicious! We have one of those little ice cream ball things - where you shake it to make it. I'll have to try this recipe.

Hi Anna

My husband had to make this a few times before he perfected it, but it is pretty good now

He is a good cook and knows instinctively which foods will go well together. Hence we are each others No 1 critic
