Hot and Sour Pickled Prawns

I found this recipe on the website of Delia Smith, one of the classical British television food personalities with an excellent website and range of published cookery books. I often look at her website as she has a huge range of recipes on there, she also has a gluten free section. Most of the recipes I use, though, are from the general section, where I both scan the ingredients and also substitute ingredients, for the odd recipe that I make.

This recipe, although it has a lot of ingredients, is so simple and tastes divine. When you scan the ingreients you will see that with the exception of the mustard, which you will need to be carefull with (most mustards contain gluten) ... these ingredients are naturally gluten free



16 large prawns, tails on
1 level tbsp drained capers
1/2 red pepper thinly sliced
1/2 green pepper, thinly sliced
2 oz red onion, thinly sliced
1/2 lemon, thinly sliced
5 fl oz olive oil
1/2 level tsp gluten free mustard
2 fl oz cider vinegar
2 limes, juice only + an extra lime to cut into wedges for serving
1 desertsp Worcester sauce
1 desert sp tabasco sauce
1/2 level tsp salt
1 level tsp sugar
Freshly ground black pepper

In a large bowl, add all the ingredients with the exception of the prawns, thoroughly mix to combine, taking care not to damage the peppers and onions
Add the prawns to the bowl and tip all the contents into a preserving jar with a seal-tight lid
Marinade in the fridge for 24 hours, turning the contents occasionally
Arrange on a plate with a wedge of lemon for an easy appetiser
